Brewer’s yeast is one of the most valuable natural sources of complete protein (52%), vitamins B1, B2, B3, B4, B5, B6, B8, E, PP, H, and essential fatty acids (oleic, arachidonic and linolenic). The development of biotechnology in recent decades has led to the emergence of a new technology for the processing of brewer’s yeast – deep autolysis, which allows increasing the content of amino acids and vitamins per unit of the preparation and preserving them in the form of the greatest activity.
